Orange-Scented Beef Stew

  • 1 large red onion halved and thinly sliced
  • 1 large carrot sliced 1/2-inch thick
  • 4 cloves garlic peeled and crushed
  • 4 strips orange zest
  • 3/4 cup orange juice
  • 1/4 cup orange marmalade
  • 1 teaspoon sweet paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried thyme
  • 1.5 kg beef chuck cut into large chunks

  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried thyme
  • 1.5 kg beef chuck cut into large chunks
Instructions
  1. In a slow cooker combine onion, carrot, garlic, orange zest, orange juice, marmalade, paprika, salt, pepper, and thyme.
  2. Add beef, turning to coat.
  3. Cook on low for 6 hours or until beef is very tender.
  4. With a slotted spoon, spoon beef and vegetables onto a platter.
  5. Place flour in a small saucepan and whisk in pan juices.
  6. Cook over low until lightly thickened, about 3 minutes.

If you don’t have a slow cooker use a foil covered tray in an oven at 100c.
